ZESTY LEMON BITES

4 cups sprouted buckwheat dried and ground fine in food processor

1/2 cup lemon juice and zest of one lemon

1/2 cup honey (or stevia)

1 cup shredded coconut

1 cup coarsely chopped almonds

1/2 teaspoon Himalayan salt (optional)

1 teaspoon vanilla and or lemon extract (optional)

mashed banana to taste (optional)

One recipe makes two large square dehydrator sheets.  Dehydrate on Teflex sheets at 105 degrees F. for 12 hours, then remove from sheets.  Cut into one inch squares and dehydrate on mesh at 105 degrees F. for another four hours or until dried.  Recipe yields about 100 squares.
